Ingredients:
- ¼ cup canola oil
- ¼ cup milk
- ¼ teaspoon salt
- 1 ½ cups blackberries
- 1 cup all-purpose flour
- 1 cup plain yogurt
- 1 cup yellow cornmeal
- 2 eggs
- 2 teaspoons baking powder
Directions:
- Mix the cornmeal, flour, salt and baking powder in a container.
- Put in the eggs, yogurt, oil and milk and stir for a few seconds to mix.
- Fold in the blackberries then spoon the batter in a loaf pan coated with baking paper.
- Pre-heat the oven and bake at 350F for forty minutes or until it rises significantly and starts to appear golden-brown.
- Let cool down and serve, sliced.
