✰ Ingredients
- 1 small ripe but firm papaya
- 300g white sugar
- 1-inch fresh ginger
- 1 tsp lemon juice
- 1 tbsp lemon zest
- 1 tsp mint
✰ Method
- Peel and chop the papaya into cubes
- In a non-stick pan, add the papaya, sugar and the rest of the ingredients
- Over low heat until the sugar melts completely and starts to crystallize
- Remove from heat
- Pour on a tray, cool, and cut into cube
