Ingredients:
- ¼ cup honey
- ¼ cup light brown sugar
- ¼ teaspoon salt
- ½ cup butter, melted
- ½ cup whole wheat flour
- 1 ½ cups all-purpose flour
- 1 cup sweet potato puree
- 1 teaspoon vanilla extract
- 2 eggs
- 2 teaspoons baking powder
- 4 apricots, pitted and diced
Directions:
- In a big container, combine the butter, honey, sugar, eggs, vanilla and sweet potato puree.
- Stir in the flours, salt and baking powder then fold in the apricots.
- Spoon the batter in a loaf pan covered with parchment paper.
- Pre-heat the oven and bake at 350F for around forty minutes or until it rises significantly and starts to appear golden-brown.
- Let cool in the pan before you serve and slicing.
