APRICOT SWEET POTATO BREAD

Ingredients:

  • ¼ cup honey
  • ¼ cup light brown sugar
  • ¼ teaspoon salt
  • ½ cup butter, melted
  • ½ cup whole wheat flour
  • 1 ½ cups all-purpose flour
  • 1 cup sweet potato puree
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 teaspoons baking powder
  • 4 apricots, pitted and diced

Directions:


  1. In a big container, combine the butter, honey, sugar, eggs, vanilla and sweet potato puree.
  2. Stir in the flours, salt and baking powder then fold in the apricots.
  3. Spoon the batter in a loaf pan covered with parchment paper.
  4. Pre-heat the oven and bake at 350F for around forty minutes or until it rises significantly and starts to appear golden-brown.
  5. Let cool in the pan before you serve and slicing.
