★★★ Armenian kebab (Khorovats) ★★★

✰ This dish needs a good smoker, hickory or maple wood, and the freshest chicken cuts in the market.

  1. Serves 6
  2. Cook time 45 minutes

✰ Ingredients

  • 6 metal skewer
  • 1 onion cut in chunks
  • 1 eggplant cut in chunks
  • 24 pieces chicken cut
  • 1 tsp pepper flakes
  • 1 tsp garlic and ginger paste
  • Salt and black pepper
  • 1 tbsp oil

✰ Method

  • Marinate the chicken pieces with the ingredients and set aside for 20 minutes
  • Meanwhile, heat the smoker for 15 to 20 minutes
  • Oil the skewer, and arrange 4 pieces on each alternating it with onion and eggplant
  • Place on the smoker for 20 – 25 minutes
