★★★ Algerian Date Filled Makroudh ★★★

✰ The natural sweetness of the dates pairs with the syrup to create magic in your mouth.

✰ Ingredients

  • 1kg grainy semolina
  • 1 cup oil + 1 tbsp
  • 1 lemon zest or any citrus
  • 200g pitted dates paste
  • 6 eggs
  • 2 cups honey
  • 1 tsp orange or rose water
  • Oil to fry

✰ Method

  • Fry the semolina in a dry pan until brown and toasty
  • Pour it into a bowl and mix with a pinch of salt and a cup of oil to form a paste
  • Mix the date with I tbsp oil and lemon zest and set aside
  • To the cool semolina mix, add the eggs, and rose water. Mix to incorporate and roll out 1 inch thick
  • Spread the date paste over the entire surface and lap over to close the dough
  • Press down and cut into a diamond shape
  • Fry until brown and soak in honey for 20 minutes
