✰ Ingredients
- 1kg grainy semolina
- 1 cup oil + 1 tbsp
- 1 lemon zest or any citrus
- 200g pitted dates paste
- 6 eggs
- 2 cups honey
- 1 tsp orange or rose water
- Oil to fry
✰ Method
- Fry the semolina in a dry pan until brown and toasty
- Pour it into a bowl and mix with a pinch of salt and a cup of oil to form a paste
- Mix the date with I tbsp oil and lemon zest and set aside
- To the cool semolina mix, add the eggs, and rose water. Mix to incorporate and roll out 1 inch thick
- Spread the date paste over the entire surface and lap over to close the dough
- Press down and cut into a diamond shape
- Fry until brown and soak in honey for 20 minutes
